When I was a child, I used to visit my grandmother every single weekend. At 4pm, for Gouter time (French afternoon snack), she used to welcome us with warm crepes and a delicious hot chocolate. From breakfast to dinner or from sweet to savory, crepes are so versatile, that’s why French people love them! So, since there’s nothing better than savouring the taste of a classic family recipe, and my grandma cannot make her famous melt-in-your-mouth crepes for all of you – I have decided to share one of my family’s secrets. I am so happy to share this amazing and simple recipe with you all, so here is my Grandma’s Homemade Crepes Recipe:
Preparation Time: 10 min
Cooking Time: 25 min
Ingredients for 15 crepes
3 eggs
2 ¼ cups of whole milk
1 ½ cups all-purpose flour
2 tbsp of melted butter
2 tbsp of sugar
1 tbsp of orange blossom water
1 tbsp orange liqueur – recommended Grand Marnier
1 tsp vanilla extract
1 pinch of salt
Preparation
1. In mixing bowl, beat eggs slightly. Add flour, milk, butter and all remaining ingredients; beat until smooth.
2. Let batter sit at least 15 minutes at room temperature.
3. Heat a 12-inch nonstick skillet over medium. Lightly coat with butter. Add 1/3 cup batter and swirl to completely cover bottom of skillet. Tip and rotate pan to spread batter as thinly as possible. Cook until underside of crepe is golden brown, 1-2 minutes.
4. Use a spatula to dislodge the crêpe and quickly flip. Cook 1 minute more. Slide the crepe out of skillet and repeat with remaining butter & batter.
5. Serve hot and add any toppings you like: sugar, honey, chocolate, jam and much more; possibilities are endless with crepes.
